Beets, watermelon and feta cheese! C’mon! So delicious. And perfect for the summer when the watermelon is full of flavour and beets are in season.
This recipe has only 7 ingredients and is really simple to put together. Most of the preparation time involves roasting the beets.

Quick tip-Don’t hesitate to add your own little extras to a salad like this! I tried roasted walnuts because I think those go really well with beets and watermelon. You may want to try a different soft cheese or nuts. Maybe add some additional greens. Whatever it is, go for it!
Ingredients
1 bunch beets, roasted and chopped
6-8 beet tips with stems chopped
2 cups watermelon, chopped in 1″ chunks
½ cup red onion, sliced
¼ cup extra virgin olive oil
2-3 Tbsp balsamic vinegar
Feta cheese to garnish (approximately ¼ cup
Instructions
Step 1
Preheat your oven to 425 degrees F. Wash beets and cut in half. Lightly coat with olive oil and place them in the oven for 20-30 minutes until easily pierced with a fork. Let cool and chop into bite sized pieces.
Step 2
In a large bowl add the beets, tops, stems, watermelon, and red onion.
Step 3
Mix together olive oil and balsamic vinegar. Pour dressing over the beet and watermelon mixture and toss all ingredients with the dressing.
Step 4
Garnish with feta cheese. Salt and pepper to taste.
I am really glad the author added some of the beet greens to the salad. If you don’t already know, beet greens can be enjoyed fresh mixed with other greens or sautéed/steamed like spinach. They are very tasty and full of nutrients.
